
Yavoriv pie/Яворівській пиріг.
Ingredients
For the dough:
180g sifted plain flour
90ml water
2 tablespoons fresh yeast
2 tablespoons sunflower oil
1 tsp sugar
1 tsp salt
For the stuffing:
50g buckwheat (or 110g soaked buckwheat)
90ml water (for soaking buckwheat)
500g boiled potatoes
1 large onion
3 tablespoons sunflower oil
0.5 tsp black pepper (ground)
1 bulb garlic
1 tsp salt
For chicken mashka (broth/paste)
720g chicken thighs
150ml water
3 tsp salt
1 stick of celery
1 carrot
1 onion
1 bay leaf
0.5 tsp whole black pepper corns
0.5 tsp allspice
50g plain flour
0.5 tsp turmeric
0.5 tsp ground black pepper
1 bulb garlic
Method
Grind the yeast with sugar, add a little warm water to form a thick mass, cover with cling film, and leave in a warm place. After 15-20 minutes, the yeast should foam.
To the flour add salt, mix, and pour in the rest of the water, yeast mass, and oil. Knead a soft dough, cover, and leave in a warm place for 1 hour to rise.
Wash and peel the potatoes, boil them in salted water. Drain the potatoes and mash them with a pestle.
Rinse the buckwheat, pour boiling water, cover, bring to a boil, set aside, and leave to swell for 30 minutes.
Dice the onion and fry in vegetable oil until golden brown.
Mix the crushed potatoes with buckwheat (drain off the excess water), and fried onions, season with salt and pepper, and add finely chopped fresh or dry garlic. The filling should not be bland.
Roll out the prepared dough into a circle with thin edges. Put the filling in the centre and press it down. Gather the dough on top in the form of a bag, and fasten it. Using a rolling pin, roll out the cake easily. Give it a round shape.
Roll the dough out till it is around 1/2 cm thick. Make sure that the sides are sealed with egg wash or water.
Calculate the size of the pie for a baking dish with a diameter of 22-24 cm. Lightly grease the tin with fat/oil. Turn the pie over and put it into the tin (seam side down). Cover with a towel and leave to rise for 20 minutes. Sprinkle with sesame seeds, and caraway seeds (optional).
Bake in a preheated preheated to 180 °C for 25-30 minutes.
