Our Mission

We were inspired to create Apples & Borsch by a recipe book created by our employee Alla Savchenko, together with a team of friends from the Authors Cuisine Ukrainian Project. The book celebrates traditional Ukrainian recipes whilst linking them to a host of regions and families through stories and old family photos.

We wanted to make this recipe book available to everyone and, from that idea, together with Alla, we developed a project that would run a series of events across Herefordshire that celebrated both Ukrainian and UK dishes – sweet and savoury – creating opportunities for people to share, cook, eat and enjoy each other’s food. 

Along the way, we’ve collected interviews from participants asking them about their passion for good food, who taught them to cook, their favourite recipes etc.

Throughout the project, we’ve run events at primary schools, churches, community centres, orchards and farms to show a real cross section of inspiring recipes and cooking. Having an event at Beefy Boys was so special, particularly for the teenagers within the Ukrainian community!

Alla was always keen that her friends, family and wider community who are still in Ukraine, will see that Ukrainian’s here in Hereford are welcome, celebrated, safe and well and that people back home have not been forgotten
