Beefy Boys Ukraine Burger / український бургер

Ingredients

Makes 4 burgers

Borscht Jam:

  • 25g butter

  • 1 tablespoon oil

  • 1 whole Red Cabbage

  • 3 medium beetroot

  • 1 red onion

  • 3 cloves of garlic

  • 4 smoked Kobanos sausages (or similar)

  • 3 tablespoons red wine vinegar

  • 2 tablespoons brown sugar

  • 2 tablespoons tomato paste

  • Salt & pepper to taste

Sauce:

  • 100g butter

  • 500g wild mushrooms

  • 2 shallots

  • 4 cloves of garlic

  • 150ml white wine

  • 225ml double cream

  • Pinch of nutmeg

  • Salt & pepper to taste

Sauce Method:

  1. Finely chop the shallots and fry in butter until transparent.

  2. Add finely chopped mushrooms and fry until golden brown.

  3. Add wine, bring to the boil, and evaporate the alcohol for a couple of minutes

  4. Add cream, seasoning, and stir constantly until the sauce thickens.

  5. Add fresh garlic, if desired, add a little nutmeg, and cook for another 2-3 minutes.

Borscht Jam Method:

  1. Fry finely chopped onion and garlic in a mixture of oil and butter

  2. Add shredded red cabbage, beetroot, red wine vinegar and sauté for a couple of minutes.

  3. Add the sliced, smoked sausages, sugar, tomato paste and seasoning and simmer, stirring until the vegetables are softened and the gravy is thickened.

Assembly:

  1. Season and cook 4 burgers of your choice.

  2. Toast 4 burger buns.

  3. Take the base of the bun and add a generous pile of the Borscht Jam.

  4. Add a slice of Emmental cheese, then the burger, another slice of cheese, and top with mushroom sauce.

  5. Finish with the top of the bun and enjoy!
