
Beefy Boys Ukraine Burger / український бургер
Ingredients
Makes 4 burgers
Borscht Jam:
25g butter
1 tablespoon oil
1 whole Red Cabbage
3 medium beetroot
1 red onion
3 cloves of garlic
4 smoked Kobanos sausages (or similar)
3 tablespoons red wine vinegar
2 tablespoons brown sugar
2 tablespoons tomato paste
Salt & pepper to taste
Sauce:
100g butter
500g wild mushrooms
2 shallots
4 cloves of garlic
150ml white wine
225ml double cream
Pinch of nutmeg
Salt & pepper to taste

Sauce Method:
Finely chop the shallots and fry in butter until transparent.
Add finely chopped mushrooms and fry until golden brown.
Add wine, bring to the boil, and evaporate the alcohol for a couple of minutes
Add cream, seasoning, and stir constantly until the sauce thickens.
Add fresh garlic, if desired, add a little nutmeg, and cook for another 2-3 minutes.
Borscht Jam Method:
Fry finely chopped onion and garlic in a mixture of oil and butter
Add shredded red cabbage, beetroot, red wine vinegar and sauté for a couple of minutes.
Add the sliced, smoked sausages, sugar, tomato paste and seasoning and simmer, stirring until the vegetables are softened and the gravy is thickened.
Assembly:
Season and cook 4 burgers of your choice.
Toast 4 burger buns.
Take the base of the bun and add a generous pile of the Borscht Jam.
Add a slice of Emmental cheese, then the burger, another slice of cheese, and top with mushroom sauce.
Finish with the top of the bun and enjoy!
