Fruit Scones | Фруктові коржики

Ingredients

Makes 12 scones.

  • 700g white flour

  • 50g baking powder

  • 125g butter

  • 100g caster sugar

  • 75g sultanas

  • 75g Raisins

  • 400ml milk

  • Pinch of salt

Method

1.     Rub together all the dry ingredients until you have something resembling fine breadcrumbs. If you have time, leave in a clingfilmed/lidded container overnight and continue the next day, but this isn’t essential.

2.     Add the milk and the dried fruit and mix quickly together, don’t overwork the dough.

3.     Shape into a large ball and then roll out to a thickness of about 2cm.

4.     Cut into scone shapes using approx.—7 cm cutter.

5.     Place on a baking tray and brush with a little milk.

6.     Bake in oven 170c/330f for 15 minutes or until browning and cooked right through. You can test if they’re cooked by gently tapping on the bottom of the scone, it should sound slightly hollow if cooked.
